the eatery. Karen's menu features breakfast and lunch items.

The working mother of four has takes pride in her
eatery's unique sandwiches, salads and soups that are all made by Karen. Many of the sandwiches at Karen's

of her fourth child. After working twelve years of working
catering and the corporate cafe at the Riverview, in Norwalk, Karen want
to strike out on her own and use that experience
operating her own
restaurant.

heritage was emphasized by her Father, who immigrated from Ireland in
1959 to play soccer in New York. Karen married her husband John in
1989 and moved to the Huntington section of Shelton in 1999 with their
two daughters and one son. Then, in 2006, Karen had her second
son. Having her own business in Shelton allows Karen to be able to
spend more time with her family. Karen also dedicates much of her
free time to CT Special Olympics as Shelton's Local Coordinator.
